Pancakes are a special treat and not one we have very often (about four or five times a year), Marlo in particular is very picky about them so I try to make them light and flavorful. I have tried many variations through the years and I finally have a recipe that everyone likes and one that we will make again! Enjoy with a cup of earl gray or Irish breakfast.

Apple and Out Flour Pancakes

Ingredients

  • I cup all-purpose flour

  • 1/4 cup rolled oats (ground)

  • 1 tsp baking powder

  • 1 tbsp cinnamon

  • 1 tbsp sugar

  • 2 tbsp ghee or melted butter

  • 1 large egg (separate yolk from white)

  • 1/4 cup apple sauce or 1/4 cup plain yogurt

  • 2 tbsp chia seeds (soaked for 15 minutes)

  • 1 tsp vanilla extract or 1/2 tsp vanilla paste

  • 1 tsp apple cider vinegar (or 1 tsp rice vinegar)

  • 2 medium green apples (or what you have at home)

  • Squeeze of lemon or lime (optional)

Directions

  • Combine flour, ground rolled oats, cinnamon, and sugar- and sift, set aside
  • Combine butter, egg yolk, milk, yogurt, vanilla, soaked chia seeds, and vinegar; mix well and set aside
  • Whisk egg white until you form firm peaks
  • Combine dry and wet ingredients and mix (will be a bit lumpy- do not over mix.
  • Add half the apples and mix until combined
  • Gently fold egg whites into batter
  • Heat skillet and lightly butter, use 1/4 cup scoop for each pancake, flip when edges are dry and center looks porous.
  • Cook until lightly golden brown
  • Cook the remainder apple in a little butter and a dash of salt and sugar (this is one of your topping), a squeeze of lemon or lime give the apples a lovely brightness
  • Serve hot with warm honey, or maple syrup, and cooked apple
